Split pea puree

Fava, or split pea puree, is a traditional Greek meze made by simmering split peas into a smooth purée and finishing it with raw onion, olive oil, and lemon. The legume most prized for it -- Fava Santorinis -- is protected by EU Protected Designation of Origin status, granted in 2010: it comes exclusively from Lathyrus clymenum grown in the volcanic soil of Santorini and seven surrounding Cycladic islets (Thirasia, Palea Kameni, Nea Kameni, Aspronisi, Christiani, and Askania), where the arid climate and sea-air moisture give it a naturally sweet, velvety character unlike ordinary yellow split peas. The dish itself is eaten across Greece, but the raw legume behind the name is a single-region, PDO-protected product.
